I think it sucks that game artists don't get a lot of recognition for the work they do on games, whether it be box art, promotional pieces, or even concept art.
of course you have superstars like Akira Toriyama (R.I.P), Yoshitaka Ammano, Ayami Kojima, etc. But they are not the norm unfortunately.
My favourite game artist is Kazuma Kaneko due to his unique art style in how he draws humans.

I'm a sucker for the artstyle of Himukai Yuji, is a little bit on the more anime side but I just love the shading on the clothes for the characters. I also really like how you can see the evolution and how much more details have been added on each design across the years.

The absolute best 8bit sprite artists on earth in my eyes are the Megaman NES sprite artists and robot master design artists with how utterly creative they are when it comes to dancing around the technical limitations of the NES. Megaman 6 is a marvel of beauty on the nes.

Do not forget Yuzo Takada, i have not seen him get much registration in ages, very niche these days, but he was responsible for major anime back in the day, such as Blue seed and 3x3 eyes. Artist like him and even some of the PC-98 artists have disappeared from the industry, which is a dame shame.

Some already mentioned here, my other faves are Fujisaka Kimihiko, Tsunako, and Kishida Mel.
Mel is a bit of a nut too as a person, it's fun seeing his antics on Twitter.
