If someone only had time to play just one, which would you recommend? Any console/handheld goes.

Are you talking about ones that are complete or ones that aren't? Because there are a lot of hacks that are really good but are either in-progress or never finished, they are still worth playing though.
As far as full-featured finished ones go, I would say Vision Quest is a pretty good one. Dream of Five is also a legendary one that's been put on hiatus and the recently re-continued and finished.
