I also second the Zero Escape saga, Sam & Max and just about every 90's-2000's LucasArts adventure game, as others have also brought up!

Zero Escape series, specially 999, VLR is a bit rough in the difficulty and ZTD reaches a nice balance but the plot is oof. The hitman games are far as I am concerned puzzle games but that is a bit of a hot take for people. A different out there choice that scratches the itch I think is Prince of Persia Sands of Time. Warrior Within and 2 Thrones has better combat but combat matters there way more and it is emphasized. Think of it like playing Uncharted and Tomb Raider, not puzzles 24/7 but it has them.
 
Of course I like puzzle games like Tetris and Bust A Move but recently started playing adventure puzzle games like Professor Layton. It plays very good on an emulator with a mouse. I also play some casual phone puzzle games (Earn money from playing them). There are some interesting ideas in the casual game space.

Some other adventure puzzle games I played in the past were

My favorite are:

Day Of The Tentacle (surprisingly bullshit-free).

The Legend Of Kyrandia (kinda BS, but not impossible).

The Misadventures Of Tron Bonne (hard, but fair).

Panic Bomber! (both extremely easy and extremely hard, no in-between allowed).

Grim Fandango (largely sane puzzles).

Indiana Jones and The Fate Of Atlantis (completely BS puzzles, but it's a fun one).

Monkey Island 1 & 2 (shockingly sane puzzles).
