Bit cheating but Konami's teams have often done absolutely beautiful and genuinely cool work with their beatmania IIDX menus. This is because one of the musicians also contributing music to each installment from Konami's own audio/music staff is always a main director, changing every installment, that will also design the audioscape for the menus. From 20th IIDX forward, they also had three layer music system that will fade in additional part once you go from initial game start with just 1st layer, to game mode choice with 2 layers and full 3 layer version when you get to music selection.

I also get stickler'd by sound effects / music / samples easily, I can say few menu sounds street fighter 5 used are same ones from DJmax portable 3 IIRC.

Seriously, though, Shining Force and MGS are some of the menu/UI sounds that stuck with me.
