Favorite Condiments and Toppings

I keep a wide variety of hot sauces in my pantry at all times. We actually have a bit of a "hot sauce culture" where I currently live which gets me access to all sorts of small batch goodness.
 
Hot honey, hot sauce, ketchup, and I've been recently obsessed with this mayo.

I love mustard. Like, a lot. I was really sad when they made that yellow mustard ice cream and I couldn't find it anywhere, because I really wanted to try it. I'll admit that I might be approaching mustard junkie level rather than just liking it, but still.
 
I'm a total junky for hot sauce and try to put it on damn near anything. Southwest sauce is another that I'll pretty much use whenever I can.

Of the more traditional ones, I really love brown mustards and good mayonnaise. I've never been huge on ketchup.
 
Ketchup, BBQ sauce, Showy sauce, and Tartar sauce.

There's this place in Gilroy, CA that sells garlic ice cream. I used to think that was weird until I heard about mustard ice cream.

Not the Ketchup not the mayonnaise (its mid very mid in fact) not the mustard or even salt its the thing above.

Black pepper is the best condiment of all time.

There's so many possible answers and at least most of them are completely valid choices! But what is your favorite or favorites?

Muenster, feta, swiss, and pretty much any spicy pepper cheese for me.

Gouda can't be beat. I had plenty of the real shit when I was living in the Netherlands, but since I returned to the states it's a high I've been chasing ever since. No gouda I've had here even comes close. I'd guess the US dairy laws have something to do with that. Otherwise, cheddar cheese curds are the best reason to live in the Midwest. Deep fried or not, they are the perfect snack. I could eat feta with a spoon as well. Ultimately, I'm happy with most any cheese. ?
