What are some of the best games to hit the Fighting Game genre in your opinion? What makes them so special?

The big daddy of the genre, Street Fighter II. (practically the OG, if not literally)

Were you around when this game came out? It was EVERYwhere.
Every 7-11 had a Street Fighter II cabinet.
Almost every pizza place had a Street Fighter II cabinet.
My local baseball card shop had a Street Fighter II Champion Edition cabinet.
We kids used to walk to a nearby liquor store because they had Street Fighter II Turbo.

I've never been very good at fighting games, but I have a lot of good memories dumping quarters into those machines.
 
-Soul Calibur II
Elegant, beginner friendly control scheme, high damage per hit, and parry mechanic makes every round a tense, deadly dance at all skill levels. Plus, weapon master mode is a really fun use of the game mechanics by letting you change your weapon stats and forcing you to adapt to different conditions.
-Guilty Gear Strive
Stylish, heavy metal inspired anime action with bombastic characters, Arc System's signature 3D-imitating-anime animation techniques, and combat that is both technically satisfying and accessible.
-Street Fighter VI
A true evolution of IV with the Drive system encouraging dynamic offense. Smooth animations, familiar controls, and hip hop inspired art direction stay true to Street Fighter's roots while letting this game stand on it's own. The single player mode is also a blast, letting you mix and match techniques you learn from other characters and even pit avatars against each other online. The biggest drawback is the smallish roster of characters.
-Blazblue: Central Fiction
Over the top anime action embodied in fighting game form, with rediculous combos, blazing fast pace, a story mode with branching visual novel scenes between fights, and absolutely stunning hand drawn HD sprites and animations. Wish they would have brought back the dub voices for this one.
-Def Jam: Fight for NY
Hip hop style and surprisingly deep hand to hand and wrestling mechanics. Quite silly, yet oddly tactical as no move is truly safe from being reversed and punished.
-Street Fighter Alpha 3
I know it's unbalanced. I don't give a shit. The animations are gorgeous, the roster is varied especially with isms factored in, and the combo potential is fucking hilarious.
-Honorable Mention: M.U.G.E.N
You can make your own 2D fighter with this engine, either from scratch or by dropping in assets made by others. Drop in some files, change some words in some text files, and PRESTO Ronald McDonald can now punch Akuma in the nuts!
 
I like "Dead or Alive" (put a lot of hours in the 3ds and ps2 titles), and no, it's not about "busty babes" because I like all characters, I don't care about the bikini costumes for the women and I think the gameplay is really fluid (though I'm not the best in making combos).

Edit after reading the previous post: I also enjoyed Soul Calibur 3 on ps2!
 
Guilty Gear Xrd will always hold a special place in my heart. It was the game that really got me into the more technical aspects of the genre and got me to play fighting games at a more competitive level.

The XX games are great as well and have that same level of depth. The most recent entry Strive was oversimplified and as a result lost so much of what made the gameplay engaging to me.
 
Way too many to mention, but I've played Sf3 Third Strike, Garou, Super Turbo, Alpha 2, and UMK3 all competitively. MK9 and UMvC3 more modern. But my overall favorite might be Last Blade 2.

The roster for me is what makes it beat out Third Strike. There's just so much variety to it. I really wish Capcom would Port MAX/ Double Upper to literally anything that isn't the psp.

Tekken Tag 2, because there is Jun Kazama, the only character I can use.
And Soul Calibur 5, because of Mitsurugi. I tried Dead Or Alive 5, but if you don't play with someone it's kinda boring playing alone. Also I can't remember the combos anymore.
The other fighting games are too hard for me, those combos are "not for me". Street FIghter, The King of Fighters, Guilty Gear, and game like these ones.

I could list more, but these are the games I played seriously.
Since the player base is huge and many of my friends play it,
I might be enjoying Street Fighter 6 the most.
 
-Tekken 5DR, even if I enjoy pretty much any tekken that isn't 8
-Samurai Shodown V special, probably my favourite 2D fighting game and the best SNK's one (KoF02UM is also good but I could never get into KoF that much)
-Undernight in-birth, another personal favourite and really underrated, best anime fighter imo
-Soulcalibur 2, probably the best soul calibur game, but I enjoy also the others
For me, these are the best ones.

I honestly love fighting games in general, even the obscure ones. I love coming across a character select screen full of new faces and trying everyone out. And I love trying to figure out the systems alongside someone else. Fighting games really come alive when you have someone to play them with (so long as there isn't a big skill gap).

But anyway, if I had to make a top ten it might be:

  4. Street Fighter Alpha 3
  5. Jump Ultimate Stars
  6. Marvel vs Capcom 2
