If this is what you're referring to(?), then there already seems to be a .deb package in the releases section. (forgot to add I haven't used linux in forever)
Should just be able to use your package manager. I haven't used Mint in a while but I imagine it's a "sudo apt install gzdoom" after you've updated your packages. It may be possible that you need to add a dependency. Then you'll just need to put wad files where they go and you're most of the way there
using the .deb file from zdoom website is the easiest way. if you cant just double click the deb file then install gdebi package installer from software center and then you can install .deb files.
