I'm craving a great, easy side scrolling platformer that I haven't played before.

The problem is that I feel like I've played all of them.

-For example I've tried almost every single US released SNES platformer, last time I checked I've played over 300 US released games on the system.

-I've probably played all the easy NES platformers, not that there's all that many as far as I know. The term NES hard exists for a reason.

-There might be some easy Genesis platformers that I haven't tried, I've kinda had bad luck finding easier ones.

-I generally don't really like playing GB, GBC, and Nintendo 64 games in general for reasons that I'd rather not get into.

-There might be some GBA platformers that I could get into. My problem is that I find the audio in most GBA games I've tried to either be pretty bad or forgettable. It also doesn't help that people mostly seem to recommend ports of SNES games that I've played through at least half a dozen times.

-There might be some PS1 side scrolling platformers that might interest me, but I don't wanna play one with rpg or adventure elements, and most that I know are like this.

-I don't know of any easy Saturn platformers. This might be a good spot.

-I also don't know of any PS2 side scrolling platformers besides Valkyrie Profile 2 and Klonoa 2, and they're not what I'm looking for as I don't wanna play something with rpg or adventure elements.

So, what does that leave me with?

Some of my faves:
Super Mario World
(you name the 90s Mario game, I probably played it.)
Donkey Kong Country
Super Castlevania

Drill Dozer on GBA
Dynamite Headdy on Genesis
Todd's Adventure in Slime World on Lynx
Coca Cola Kid on Game Gear
Exile 2 on Sega CD(unworking design version)
Popful Mail on Sega CD(unworking design version)
Bruce Lee on the GBA

The thing is can't imagine "easy" platformer games until PS1 era, especially on Sega Genesis with great exception like Spirou, Another World, Flashback and X-Men games. Usually Genesis platformers are in the way little kids going bald in 10 minutes because of games like Chakan and Doom Troopers lol for they are especially designed to have BS platformer gameplay so player will die for sure lol. I mean to say Genesis is a "dying simulator" platform that we even have a game called "The Immortal" that some parts of the floor collapse but there is no indication which part of the floor is bad to step on so the game enjoys killing you and you restarting the game millions of times before you can beat the 1st level. Is Dark Souls hard? Try Sega Genesis games, kiddos lolol. Genesis platformer games are the reason for why I hate platformer genre and refuse to play any platformers or any game that has platformer elements with great exception. However relatively NES and SNES have easier platformer games for sure due to the way these are consoles for little kids.

During PS1-era I don't really remember much of an "easy" platformer game other than Crash Bandicoot games, Disney's Tarzan and this: https://retrogametalk.com/repository/psx-iso/jackie-chan-stuntmaster-usa/

And during PS2-era there are Sly Cooper series, Prince of Persia series and Futurama. And then there is Shinobido: Way of the Ninja game that we can stretch it as "easy platformer".

In short so many video game adaptations have platformer gameplay so you may check some random cartoon and whatnot's name or something to find an easy platformer game of it. Also so many games that target little kids have platformer gameplay too.

I could just put in any Metroidvania and call it a day beginning with Hollow Knight but that game aint easy. Ok so I think newest strider is a good choice, not exactly that much of a retro game though. One my my favorites is Dracula X Chronicles on PSP though but not exactly all that easy.

You didn't mention Atari so have you tried the 1995 Rayman? The sequels are on Dreamcast, Playstation and Gamecube so you can avoid the N64 and still play them if you end up enjoying the first one.
