Purely racing aspect I'd say Need For Speed Underground 2, Need For Speed Most Wanted, and Gran Turismo 3.

Need for Speed Most Wanted is my childhood, and I´ve been playing Gran Turismo 1 and 2 lately and having the time of my life but nothing can beat Ridge Racer Type 4

That game & NASCAR Rumble are some damn good Mario Kart-esque games.
