For video game pinball, I'd probably have to go with Demon's Tilt and Xenotilt, and the Crush games are always fun.

For actual tables, I really like one from 1972 called Fireball that has a metal disc that spins in the middle of the table, so it'll catch the ball and shoot it in random directions. There's another one called Orbitor 1 that's got this weird space theme and a a cool molded playfield. Photos almost don't get the point across, but I found a couple here:

I currently live pretty close to the Seattle pinball museum, and they rotate out machines every so often so I've played a good variety of new and old stuff. I think the oldest one they have is 1960 and it's got scoring where 1000 points is doing really well, heh. For me, I just need a table that doesn't have too wide of a gap at the bottom so that I don't accidentally lose all my turns really quickly, and I'm generally going to enjoy it.
 
I Personally do like the Pokemon Once and the Balls of Steel one from Duke Nukem,and I like Pinball Quest on the NES there is also Pinball of the death and Alien Crush that are quite alright.
 
There is a awesome rom hack of Pokemon Pinball called Pokemon Pinball Generations that has Jhoto from Gold and Silver instead of Kanto and has all the Pokemon from Gold and Silver including a Gold table and a Silver table. If I may just post a link here... https://rainbowdevs.com/title/pinball/

Pinball Dreams and Pinball Fantasies were staples when I was a kid alongside Balls of Steel and the Space Cadet table. I didn't even know that the latter was basically just a demo until years later. Microsoft really did Cinematronics dirty.

Later down the line I discovered some cool and oddball games. Alien and Devil Crush are pretty cool. Fantasic Pinball (that's not a typo) for PS1 follows the same formula but with a cutesy anime style. There was a time every franchise had to have a pinball spinoff so Worms Pinball exists. Another odd one is Necronomicom - a Japanese Saturn exclusive that was some sort of collab with Dream Theater iirc. Pro Pinball series is pretty good. I like Big Race USA in particular.

As far as modern stuff goes, there's the PinballFX series that's pretty neat as well as Demon's Tilt and Xenotilt. One thing that bothers me about recent pinball games is the amount of particles and visual clutter. Maybe I'm just getting old but they really screw with my eyes.
 
I have tried many but the best one I have played was in a cellphone between 2005 - 2007, I just don't remember the name but I have the memory that it was probably on a nokia or a sony ericsson.
