Hey all! I've decided to get into emulation properly after, like many of us, becoming disillusioned with the state of gaming at the moment. I've been quite happy with my decision and am really looking forward to getting back into so many titles I've missed out on over the last couple of decades.
I'm starting with my Vita so my question is: Are there any great games that people usually overlook on either the Vita or the PSP?

Try Gun Shodown for PSP, also GTA Chinatown Wars (since is often overlooked in comparision with the Stories), Ben 10 Protector of Earth and Crash of the Titans (this is more overhated than overlooked but still)

People don't talk enough about Street Fighter Alpha 3 MAX, SOCOM, and Tenchu Shadow Assassins, which is a crime punishable by being shoved into a locker because those games are the shit!
I dont know about the Vita, but the PSP versions of Ridge Racer (1 and 2) and Star Ocean (1 and 2) are good. Theres also a anti-slowdown patch for Final Fantasy Tactics on PSP, and arguably the best version of Final Fantasy 1 through 4. Castlevania: Dracula X Chronicles on PSP is solid too.

I've played (And really enjoyed) GTA CW- I also got a few hours into the PS2 version of Gun- is the PSP version different?

I'll certainly try SFA3 Max- I always enjoy Street Fighter and haven't played this one before.
As far as I know, there are like 3-4 SOCOM games on PSP- any to avoid or are they all solid?
I saw Tenchu before but was concerned about the camera controls with only one stick.

I wasn't a huge fan of the Vita Ridge Racer but I'll try the PSP games for sure.
Star Ocean will also be on my list when I have a couple hundred hours to spare. The early FF games are difficult for me to get into but FF Tactics has been on my list for a while.
As for Castlevania, I've only got into the series very recently (Please forgive me!) so I still have to play the 10/10 entries but I'll add this to my list for the future.
I was going to play it when I originally got my Vita back in 2014 but never found a copy and then, when it was released for PS4/5, I swore I'd finally play it but found that it doesn't seem as impressive on the PS5 as it would have been if I'd played it on the Vita. I'll still get around to it.... eventually.
2 recommendations for Ridge Racer makes me move it slightly higher on the list!
I've played most of the Project Diva releases between PS3/PS4- are there any titles exclusive to PSV/PSP?
I played EDF 2 on Vita- it's always great, mindless fun!
As mentioned earlier, my only concern with Tenchu is the camera control but maybe it's not that bad.
Already have Growlanser, looking forward to playing it!
Is the second game Valkyria Chronicles? Really enjoyed it on the PS3 but I remember getting stuck on a late mission.
Tactics Ogre is another game I've heard a lot about but never played, good call.
And Jeanne D'arc looks very interesting- I haven't heard anything about it so I'll have to check it out!

Sadly I cannot help you much with Vita or PSP titles, I have only emulated Wipeout and Curse Of The Moon, both good mind you. However... I can and will wish you a warm welcome to RGT.
