The Power of Friendship!
Apparently, shows like FairyTail spam it to the brink of parody, but when the trope is applied earnestly and sincerely, I'm a sucker for it more often than not.
 
A cute anime girl that is initially seemly happy, upbeat and innocent but the themes around it are actually twisted, morbid, gorey and grotesque. Like Saya No Uta, Gakkou Gurashi!, Higurashi When They Cry or Misaki from NHK! and Kohaku from Tsukihime
 
the childhood friend. good lord the childhood friend. nothing beats having a nice natural pre established relationship to contrast against how the protagonist would act against the other heroines. shes seen the protagonist at his most unguarded his most awkward his most real. if hes lost he can turn to her because she probably knows more about him than himself. their relationship always embodies this bittersweet mix of longing and familiarity i love it. maybe shes been harboring feelings for years too scared to ruin the dynamic by confessing. or maybe shes fiercely supportive even as she watches the protag stumble through relatinships with other people. theres always this unspoken tension bubbling under the sufrace of "what couldve been" or "will they ever realize." even ignoring the romantic appeal to have a true best friend like that that youve grown up with your whole life would be fantastic. shes the one dragging him out the bed when he oversleeps shes the one scolding him for forgetting his homework or vice versa. you always walk home together everyday brushing shoulders. you call eachother nicknames exclusive between you two like youre both sharing a bubble. i fucking love the childhood friend and honestly as contradicting as it might be maybe theyre often best just staying childhood friends. sure they have the best chemistry and shes almost always the best girl but the appeal of the childhood friend is that theyre the childhood friend. make it something more than that and everything about her that made her special would be gone in favor of a normal romantic character dynamic. except its worse than a normal romantic relatinship because none of it was earned within the story to the audience... nah i dont care still going her route every time
 
It's admittedly kinda trashy but I do enjoy your typical goofy, happy-go-lucky dude that is secretly a badass or has some deep trauma. Picture Vash from Trigun or Kevin from the Trails series.
 
The whole Chekov's thing, it feels great to be able to notice it when done right.
I enjoy that most when it's used as a brick joke.

Tangential to that, chain of deals or chained fetch quests can sometimes be really fun.
