In light of a thread I just viewed "Spaghetti bolognese vs pizza" I want to throw a recipe for a marinara sauce that's really good on either pizza or spaghetti. The big difference between theb2 sauces is that pizza sauce is usually blended into a smoother consistency and this can be done using a emulsion blender.
Now without further ado Crash's World Famous Marinara Sauce.
½ cup minced onion
1 tablespoons Olive Oil
2 cloves garlic, crushed
2 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
Water, add as needed for a thinner or thicker sauce. Your preference. I'll usually add 1 cup of water initially and then more for a pasta sauce.
2 tablespoons white sugar. The sugar will help cut down the acidity of the sauce and help give it a more mellow and less sharp flavor.
1 ½ teaspoons dried basil
Fresh Basil: I love fresh basil I use a ton in my sauce.
2 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon ground black pepper
Now if we're making sauce for a pasta we can add 1 lb of ground beef and Italian sausage or any combination of the 2.
Step 1. Mince and cook onions in olive oil until they smell sweet and delicious. Then add garlic and 1 teaspoon Italian seasoning.
Step 2. (If you're making it for pizza go to Step 3) Cook your meat and season to taste. Salt, pepper, more Italian seasoning.
Step 3. Add crushed tomatoes and tomato paste to onion and garlic mixture rest of seasonings and water.
Step 4. (Add meat if for Pasta) Let it simmer, and cook the onions down stirring and mashing the tomatoes up as I go.
Now if we're making this sauce for pizza use an emulsion mixer and smooth it out.
