Need Help with Translation Rom Hack

Hi, I'm currently trying to start a translation project for Mario Super Sluggers. The idea is to make a version of the game that's as if Nintendo had released it in Europe back then.

I've started work on the dialogue translation itself; the problem is I can't seem to find a way to extract text files from emulated Wii roms to then edit and recompile in the game.
I had downloaded a programme a while back called WiiScrubber, but that seems to only read Gamecube ISOs (plus it's incredibly slow and clunky, having to go through every single hexadecimal value before you can do anything). I also tried texture dumping on Dolphin, but that obv only gives me image files of the textures and font, which is not what I need to work with.
So I'm just stumped; I was hoping maybe someone here would be able to help me figure out what to do.

As for the translation itself, I know Italian, Spanish and German, but if anyone were interested in helping with other languages like French and whatnot, or even just proofreading the localization, it would be appreciated too.
