For example if I wish to use such a program to get music from
NES Airwolf
Airwolf (U).nes
how would I Jason exactly use such a program to get the music and sounds from that NES file please? Thank you in advance.

You could record them with OBS or Audacity.
But there's a good chance people just already done that and put it on Youtube :
