Any Japanese only games for the N64 I should know about or get
 
No idea about Last Legion, but SaP and Shiren 2 have English patches, which is nice.
Speaking of which, I was actually wondering if OP specifically requested gamed without an English patch or just Japanese games as a whole, because I went with the former.

Perhaps the real JP N64 games were the roms we suggested along the way
That never gets old. I guess if we are going to be somewhat pedantic about this, maybe we could consider the N64DD games? but they aren't really worth the trouble.

There actually aren't a ton of noteworthy JP-only N64 games, but the Virtual Pro Wrestling ones are supposedly really good if you're into AKI-style wrestling games. Personally I've always wanted to try Dezaemon 3D, the build-your-own-shmup game.
 
The Evangelion game only came out in JP. If you're into trains, Densha De Go is pretty neat.
 
it might be a bit of a stretch but the mario artist games on 64DD are really cool, especially polygon studio. i've shilled those a couple of times on this board at this point though, soooo...

the original animal crossing, doubutsu no mori, is pretty interesting on n64! it's severely lacking a lot of the big staples of animal crossing, (the museum, the able sisters, a few house upgrades...) so it feels kind of underbaked in a lot of ways, but it's still a pretty nifty piece of history.

uhhh... yeah, that's all i got unforch. pretty much, just check out the 64DD, it's got a handful of pretty cool games.

The song list is comically small, presentation is charming but there's not much outside of that.
Can make for a fun afternoon if anything
