Not about Christmas per se, but I remember a few years ago a Rock, Paper, Shotgun author recommended Skeal as a good Christmas tradition game. This thread made me play it and got a good set of laughs from me:

You just WASD your way over to the ski ramp and then let the magic flow.*

*Magic flow may be compromised for people who were born too late to remember the absolute cultural juggernaut that was Seal's "Kiss From a Rose" back in '94.

LRR LRR LR LR then type Merry

Banjo-Kazooie, as the Freezeezy Peak level is Christmas themed.
Banjo-Kazooie: Santa's Village
Banjo-Kazooie: Snowglow Village
Banjo-Kazooie: New Snow Glow Village
Banjo-Kazooie: How The Gruntch Stole Christmas
Banjo-Kazooie: The NightBear Before Christmas

Costume Quest: Grubbins on Ice is kind of one (Multi)
Daze Before Christmas (SNES/Mega Drive)
Secret Santa (PC)
Santa Claus in Trouble (PC)
Santa's Story of Christmas (PC)
Snowdown (C64)
Santa's Grotty Christmas (C64)

There are tons of old home computer ones. Look up LGR's YT channel, he probably has a playlist of all the ones he's covered.

It depends on what platforms you're looking at. Steam is rife with Christmas/Holiday games, though a stunning amount of them are of pretty low quality.

Personally, there are a few good games that I recommend to people, which you might not have tried out yet:

SantaCraft - Steam (It's a top-down grid-based survival crafter. It started out pretty simple, but they've added a few free updates since then)

Little Inferno - Ho-ho-holiday DLC - Steam (A game where you get to burn stuff, but this time there are holiday items and decorations as well as other stuff)

Viscera Clean-up Detail - Santa's Rampage - Steam (A game where you clean up after the song "The Night that Santa Went Crazy by Weird Al. A stand-alone taster for the main VCD game.)

Santa's Xmas Caper - C64 (A side-scrolling shooter where you have to blast your way to a happy christmas. Simple but fun.)

Santa Clause In Trouble - PC (A full 3D platformer, though it'll play like ass unless you have specific stuff installed or us a VM. Also has a full paid-for sequel with way more content and stuff for you to do.)

Christmas Stories: Nutcracker - PC (hybrid of hidden-object-games and point-and-click games. You have to save the Nutcracker and his GF at Christmas. Pretty fun)

Holiday Lemmings - DOS (a holiday-themed version of the classic DOS puzzle game. You can actually get 4 different version from '91-'94, but the last version has all the levels, so probably get '94.)

The Grinch - GBC (I know you already know about the PS1 version, but on gameboy colour it was actually a pretty intresting grid-based stealth game, rather than the 3D action-adventure that you're familiar with. Actually much better on handheld)
