Random Grilled/Toasted cheese sandwich thread

I decided to have a light dinner tonight. Got out the sandwich press & made myself some toasted cheese sandwiches.

So my question is: what are everybody's go-to fillings for a grilled/toasted cheese sammich?

I usually just have cheese & tomato, but tonight I had a few mushrooms left in the fridge so I added them in as well.

One time I also had one using leftover roast turkey & onions. My goodness, that was delicious! Too expensive to have regularly though ::sailor-embarrassed
 
I usually don't add anything in the sandwich, except maybe pepperoni once in a while to give me that pizza vibe. Instead, I tend to like seasoning the pan and letting it mix with the butter/olive oil to get the outside of the sandwich and the crust really tasty

That still sounds pretty good! I haven't really tried making one on a stovetop before. I've just got a cheap little sandwich press thing. It seals the sandwich and cooks whatever is inside.
I imagine it might be more difficult to have as much filling if you do them on the stovetop

This butter + sliced mozzarella makes a fun flavor that seems like it would be a good side dish at a pizza restaurant. Works really good with Italian bread. One of my tricks is to use frozen bread to make it easier to press lots of butter into it.

For a more classic flavor I just use American cheese. I don't like the cheap stuff like Kraft so I spend a bit more money on a better brand like Boar's Head

Yeah, most of the time I just use some cheaper slices of cheese from the supermarket. I did spring for a decent block of cheese the other week though, and it does make a difference!
 
Add spices like chives or italian seasoning for an extra little pop
While still tasty, mine are pretty basic hehe
I might have to write that one down

If I'm having soup, I tend to just have some toasted bread on the side. Might have to give a toasted cheese sandwich a go as a side next time I have soup! ::fire
