Any kind, arcade or simulation, futuristic or current era (or even older ones).

Personally my favourite is The Firemen on the Super NES:

Brave Fire Fighters, I used to play that in the arcades, it had motion tracking hose which was very cool for the time. I only ever wish it was properly emulated

You basically have to constantly manage stream of water to fight off flames, and extinguish them very quicker, which is quite different compared to just shoot/reload, basically being more like time trial based, with score becoming better the quicker you put off flames. And the added hose controller added more into that feeling of "being a firefighter" lol
 
Definitely The Firemen on the snes and psx sequel. Wish USA got them. I bought Firegirl DX a couple years ago cause of the Paper Mario esthetics, but....it was bad. Terrible Controls and gameplay just made me -_- so that is my vote for worst
 
Too be honest I find it weird that all these fireman games are only in Japan and not America. I only played Firemen 1 SNES & Firemen 2 PS1.

Japan has a fascination with all sort of odd jobs.
 
One that hadn't been mentioned is Jaleco "The Ignition Factor" more in the "simulation" side as you need to worry about time limits, encumbrance, taking the axe or the electrical extinguisher, etc.
 
Nuclear Blaze. A short, 2-hour experience on first run but the second run is intense.

 
Speak of the devil. I'm currently playing Firefighter F.D. 18 for PS2 and I'm interested in checking out other firefighter games just to see what is out there, and because my favorite on-going show is 9-1-1 (it's cheesy fun).

Fighter F.D. 18 is a Konami game that is from the same era as Silent Hill 2/3 and Metal Gear Solid. It has some aspects in common. Smoke builds up in area and makes the visibility low, giving things a spooky SH feel, while it has this big "Hollywood" feel to the action and music that feels indebted to MGS.

It's fun, it plays like a slow 3rd person shooter mixed with this time attack/speed run element as you try to make your way through debris, flames and collapsing buildings/exploding cars to rescue survivors as fast as you can. The funny thing is, there are also bosses, which are big fires with lifebars and names that will actually target you specifically. I'm also enjoying the cutscenes. The game makes my emulator crash pretty often which is frustrating, but like I said earlier, there is a speedrun aspect to the game so even when I have to replay a level its usually pretty satisfying to see how much faster I can pull it off.

I've only played like 60-90 minutes though, but so far I recommend it and I hope to check out some other firefighter/search and rescue type games in the future since I like games that have an unconventional approach to the way they handle "Action".

Funnily it's actually a Phantasy Star Online predecessor as the Sonic Team worked on both and I'm pretty sure it was the basis of the game design with the 4 areas, Shou's design being reminiscent of Ash (the default Humar) and Big being basically a human Racast.

The only difference is the removal of jumping and voice acting (for technical reasons as you had 9 different classes).
