I still get a kick out of Pikachu's Winter Vacation, Bulbasaur's reaction to Squirtle eating the Bulba-Cookie is classic. Plus they're both wearing party hats.

Mine would have to be the last episode of Magician's Academy. For a weird ecchi comedy anime, the episode had a really sweet ending.

I haven't seen it yet, since I've just watched 8/12 episodes of that anime so far.

The Big O - Episode 11

A nice breather episodes between two huge ones. Festive yet still mysterious and eerie at times, like all episodes of Big O.

Toradora - episodes from 17 to 19:

I'm not big on romcom but I quite enjoyed these back in the day. Very bittersweet.
